It fermented with some full clusters with indigenous yeasts in oak vats and matured in oak foudres and bocoyes for 16 months. It's very spicy, peppery and aromatic, floral, a little la Vosne Romane, with depth and complexity, very chalky, nicely textured, tasty, elegant
